Buying Guide: What to Look for in Fermented Robusta
If you’re a roaster, importer, or brand considering fermented Robusta for your lineup, here are the critical factors to evaluate:
Traceability: Can the supplier trace the lot back to a specific farm, processing facility, and fermentation protocol? Generic “fermented Robusta” from an anonymous origin is a red flag. The best producers control fermentation at their own facilities and provide lot cards with every shipment.
Consistency: Request samples from multiple production runs or harvest dates. The most impressive single sample means nothing if the next batch tastes completely different. Ask how the producer controls fermentation consistency — do they use standardized protocols, selected starter cultures, or proprietary processes?
CQI scoring: Fine Robusta must score 80+ on the CQI R-grading scale. Ask for cupping scores evaluated by a certified R-Grader, not self-reported scores. Learn more about CQI R-grading and what Fine Robusta means.
Processing transparency: A reliable producer will tell you exactly how their coffee is fermented — the method, duration, whether starter cultures are used, drying protocol, and moisture targets. Vague descriptions like “special fermentation” or “unique processing” without specifics suggest the producer doesn’t fully control or understand their own process.
Scale capacity: Can the supplier deliver your volume needs consistently? Many fermented Robusta producers can only offer micro-lots. If you need recurring supply for a private label or blend, verify the producer’s annual capacity and farm network.
